Wraps are so simple and fun to make…there are so many different veggie wrap variations you can throw together. Here’s one I made last night! Oh and don’t get scaredby the word tofu! lol By itself, it’s very very bland, but it absorbs flavor extremely well so it will taste like whatever you season it with!
Tortilla wraps (I used whole wheat)
Sliced Tofu (my favorite tofu is Soy Boy Italian..this kind is already seasoned and it’s very, very firm.. you can even eat it without cooking it..it has the consistency of and tastes like cheese! promise)
Sliced onions and peppers
Handfull of chickpeas
Handfull black beans
About 1/4 cup of Campbell’s V8 Southwestern Corn soup (just a heads up, this soup is *not* Vegan)
Handfull shredded non-dairy cheese
2 tables spoons olive oil or Pam cooking spray
-Sautee the onions & peppers in the olive oil or Pam cooking spray for a few minutes
-add the sliced tofu and after a few minutes add the Southwestern corn soup
-Toss in the chickpeas, black beans and cheese and you’re done!
